• 1 cup water
• 2 tablespoons tapioca starch

• 1 teaspoon salt
• 1/2 teaspoon garlic powder

 

METHOD OF PREPARATION:

1. Soak Cashews: Drain and rinse the soaked cashews.

2. Blend Ingredients: In a blender, combine the cashews, water, tapioca starch, nutritional yeast, lemon juice, apple cider vinegar, salt, and garlic powder. Blend until smooth.

3. Cook the Mixture: Pour the blended mixture into a saucepan and cook over medium heat, stirring constantly. The mixture will start to thicken and become stretchy, resembling mozzarella cheese. This should take about 5-10 minutes.

4. Cool and Store: Once thickened, remove from heat and let it cool. Store in an airtight container in the refrigerator.

• 1/2 teaspoon garlic powder
• 1/2 teaspoon onion powder
• 1/4 teaspoon turmeric powder (for color)
• 1/2 cup water

 

METHOD OF PREPARATION:

 

1. Soak Cashews: Drain and rinse the soaked cashews.

2. Blend Ingredients: In a blender, combine the cashews, coconut milk, nutritional yeast, lemon juice, apple cider vinegar, salt, mustard powder, garlic powder, onion powder, and turmeric powder. Blend until smooth.

3. Prepare Agar Agar: In a small saucepan, bring the water to a boil and add the agar agar powder. Stir well and cook for about 2-3 minutes until the agar agar is completely dissolved.

• 1 bowl rice flour
• 1 bowl boiled corn
• 1 onion, finely chopped
• Vegan mozzarella cheese (as prepared above)
• Vegan processed cheese (as prepared above)
• Oregano
• Freshly ground black pepper
• Chili flakes
• Salt, to taste

 

METHOD OF PREPARATION:

 

PREPARE THE DOUGH:

1. Heat a bowl of water until it boils.

2. Add a bowl of rice flour to the boiling water and mix well. Turn off the heat.

3. Add salt to taste and let it cool for a while.

4. Once cooled, knead the dough well with your palms until it becomes smooth.

5. Apply some oil to your palms and make the dough smooth and form it into a large ball.

 

PREPARE THE  STUFFING:

1. In a bowl, mix finely chopped onion, pre-boiled corn, vegan mozzarella cheese, and vegan processed cheese.

2. Add black pepper, salt, oregano, and chili flakes. Mix well.

 

ASSEMBLE THE MOMOS:

1. Take a small ball of the rice flour dough and roll it out.

2. Place a spoonful of the stuffing in the center of the rolled-out dough.

3. Fold and seal the momos in the traditional momo shape. Repeat for all momos.

 

STEAM THE MOMOS:

1. Heat some water in a pan until it starts boiling.

2. Grease a sieve or steamer tray with oil and place the momos in it.

3. Steam the momos for about 10 minutes.

 

SERVE

Once done, serve the hot, flour-free corn cheese momos with your favourite chutney.
