• 1 tbsp sesame seeds

• 8 oz noodles
• 1/2 cup chopped cucumbers
• 1/2 cup chopped cabbage
• 1/4 cup chopped kimchi
• Crispy seaweed for topping

 

Instructions:

1. Mix gochujang, vinegar, chili flakes, sesame seeds, sugar, and sesame oil to make the sauce.
2. Cook noodles according to package instructions, then rinse in cold water.
3. Combine noodles, cucumbers, cabbage, and sauce in a bowl.

• 1/2 tsp red chili powder
• 2 cups water
• 1 cup chopped spinach
• 1/2 cup chopped onions
• 1 tbsp garlic, minced
• 1 tbsp ginger, minced
• 1 cup crushed tomatoes
• Salt to taste
• Cooked quinoa
• Cucumber and tomato salad for serving

 

Instructions:

1. Heat 1 tbsp oil in a pot, add cumin seeds, red chilies, and hing.
2. Add soaked red lentils, turmeric, cumin, coriander, and red chili powder. Cook for 2 minutes.
3. Add water and cook until lentils are soft.
4. In another pan, heat 1 tbsp oil, add cumin seeds, onions, garlic, and ginger.
5. Add crushed tomatoes and cook until concentrated.
6. Add chopped spinach and cook until wilted.
7. Combine cooked lentils and spinach mixture.

• 1 radish, sliced
• 1 cup dried mushrooms
• 1 onion, sliced
• 1 cup chopped scallions
• 1 cup chopped cabbage
• 1 cup watercress
• 1 block tofu, sliced

 

Instructions:

 

1. Mix gochugaru, soy sauce, cooking wine, garlic, pepper, and salt to make a paste.
2. In a pot, combine water, dried seaweed, radish, dried mushrooms, and onion. Simmer for 10 minutes.
3. Prepare a shallow pot with mushrooms, scallions, cabbage, watercress, and tofu.
4. Add the spicy paste and pour in the vegetable broth.
5. Bring to a boil and simmer for a few more minutes before serving.

3. Add avocado oil, tofu, mushrooms, and peas. Toss well.
4. Bake at 375°F for 20-30 minutes.
5. Blend soaked cashews with water until smooth. Stir into the baked dish.
6. Bake for an additional 10 minutes.
