
You might have seen a bird’s nest, but would you like to eat it too? Don’t panic. We’re not going to feed the bird’s actual nest. Here we are telling you how to make a vegan food dish which is not only creative but also delicious.
INGREDIENTS :
• 4 large boiled and mashed potatoes 1 onion finely chopped
• 1 inch piece of ginger (grated)
• 1 green chilli finely chopped
• 1/2 cup soya paneer (grated)
• 2-3 tsp finely chopped coriander
• 1 small Teaspoon salt
• 1/2 Tsp red chilli powder
• 1/4 Tsp turmeric powder
• 1 Tsp roasted cumin powder
• 1/2 Tsp chaat masala
• 1 cup vermicelli
• Pant based Oil for frying.
FOR THE BATTER:
• 3 Tbsp flour
• 3 Tbsp cornflour powder
• 1/4 cup water
• 1/4 Tsp salt
• 1/4 Tsp black pepper powder.
FOR VEGAN EGGS:
• 1 cup soya paneer
• 1/2 Tsp black pepper powder 1/4 tsp salt.
METHOD OF PREPARATION :
• Make a bowl by mixing onion, green chilli, ginger, soya paneer, green coriander and spices in mashed potatoes.
• Take flour in a separate bowl, add salt and black pepper powder to it and make a thick batter with the help of water.
• To make nest eggs, first mash the soya paneer. Then add salt and black pepper powder to it and make small balls. Spread vermicelli in a plate. Crush them a little with your hands. Now dip the bowl made of potato mixture in the solution and take it out and coat it with vermicelli. These became ‘nests’. Keep them in the refrigerator for ten minutes.
• Heat oil in a pan and lightly fry the eggs made with soya paneer. Take them out and keep them separately. Now take out the ‘nests’ from the fridge and fry them until they turn golden Fry it. Take them out on kitchen paper so that the oil can be absorbed.
• Place fried nests on a serving plate. Spread sweet and sour tamarind chutney and mint or green coriander chutney on it. Now place three balls i.e. eggs on top of it. Here are the bird nests ready to eat.
