COCONUT RABDI ROLL

INGREDIENTS:
• 200 grams coconut powder
• 1/2 tsp green cardamom powder
• 1 tsp coconut oil
• 1/2 liter coconut milk
• Sugar, to taste
• 10 almonds
• 1/4 tsp saffron soaked in coconut milk
METHOD OF PREPARATION:
1. Boil the Coconut Milk: In a pan, boil the coconut milk. Reduce it until it is one-fourth of its original volume.
2. Add Coconut and Sugar: Stir in the coconut powder and sugar. Cook the mixture well, stirring continuously.
3. Incorporate Saffron and Cardamom: Once the mixture thickens, add the saffron-infused coconut milk and cardamom powder. Mix thoroughly.
4. Form the Rolls: Lightly oil your palms with coconut oil. Take a small portion of the mixture and place an almond in the center. Shape it into a cylindrical roll.
5. Garnish and Serve: Sprinkle cardamom powder and a few saffron strands over the rolls. Now you can enjoy these Coconut Rabdi Rolls as a divine treat or a delightful dessert.
PANJEERI

INGREDIENTS:
• 50 grams water chestnut flour( Singhare ka atta )
• Powdered sugar, to taste
• 2 tablespoons small pieces of coconut, cut lengthwise
• 20 grams grated almonds (fried in coconut oil) + 20 whole almonds
• 50 grams coconut powder
• 1/4 teaspoon saffron
• 30 grams carom seeds
• 40 grams makhana (fox nuts)
• Coconut oil*, as needed
• 1 teaspoon green cardamom powder
• 30 grams (Gond)edible gum (fried in coconut oil)
• 1 tablespoon roasted coriander powder
(*Any plant based oil can be used for cooking.)
METHOD OF PREPARATION:
1. Heat the oil: In a pan, heat the coconut oil .
2. Cook the Ingredients: Add the coconut powder, grated almonds, and carom seeds to the pan. Cook until aromatic.
3. Add Remaining Ingredients: Add the remaining ingredients (except powdered sugar). Continue to cook, stirring well to combine and ensure even cooking.
4. Cool the Mixture: Allow the mixture to cool once it is well-cooked.
5. Add Sugar: After cooling, add the powdered sugar. Mix thoroughly.
6. Garnish and Serve: Decorate with saffron and a sprinkle of green cardamom powder. Serve as a divine treat or a wholesome snack.
