2. Roast the Flour: Add the water chestnut flour to the remaining oil and roast until it turns golden.

VEGAN MODAK

INGREDIENTS:
• Rice flour: 1 cup
• Water: 1 cup
• Coconut oil: 1 tsp
• Salt: a pinch
FOR THE FILLING:
• Grated coconut: 1 cup
• Jaggery: 3/4 cup (Ensure it is vegan)
• Cardamom powder: 1/2 tsp
• Chopped nuts (cashews, almonds): 2 tbsp
METHOD OF PREPARATION:
1. Prepare the Dough: Boil water with a pinch of salt and a teaspoon of coconut oil. Add rice flour slowly while stirring continuously to avoid lumps. Cover and let it sit for a few minutes. Knead the dough while it is still warm until it becomes smooth.
2. Make the Filling: Melt jaggery on low heat in a pan. Add grated coconut and stir until the mixture thickens. Add cardamom powder and chopped nuts. Mix well and let it cool.
3. Shape the Modak: Take a small portion of the dough and shape it into a cup using your fingers. Place a spoonful of the coconut-jaggery filling inside and seal the edges, forming a modak shape.
4. Steam the Modak: Steam the modaks in a steamer for about 10-12 minutes until they are cooked. Allow them to cool slightly before serving.
Tips:
• Ensure the dough is soft and pliable to make shaping easier.
• Use a modak mold for uniform shapes and quicker preparation.

• Plant-based milk: 3-4 teaspoons (as needed)
